Honey Comb Cake  ⠀
INGREDIENTS:⠀
1 ½ cups all-purpose flour⠀
1 cup sugar⠀
1 teaspoon baking powder⠀
½ teaspoon baking soda⠀
1 teaspoon salt⠀
⅓ cup cocoa powder⠀
¾ cup butter softened at room temperature⠀
2 large eggs⠀
2 teaspoons vanilla extract⠀
¾ cup sour cream, room temperature⠀
3 cups buttercream, tinted yellow⠀
⠀
CHOCOLATE HONEYCOMB:⠀
2 cups yellow candy melts⠀
2 feet small bubble wrap⠀
⠀
STEPS:⠀
Make the chocolate cake⠀
Preheat the oven to 350 degrees. Line two 6-inch cake pans with baking spray and parchment paper.⠀
In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and cocoa. Using a hand mixer, blend the butter, eggs, and vanilla into the dry mix. Fold in the sour cream. Pour the batter into the pans and bake for 25 to 30 minutes until each cake has set, and a toothpick comes out clean. Remove cakes from the pans, and allow to cool completely.⠀
Once cakes are cooled, approximately 3 hours later, divide cakes in half. Place 1 half of the cake on a turntable, and place a quarter of a cup of frosting on top. Smooth out, and repeat with all other layers. Completely cover the cake in frosting, and place in the fridge to set.⠀
Make the bubble wrap honeycomb⠀
Measure bubble wrap to fit around the sides of the cake tightly, and approximately 1 inch taller than the cake. Unravel, and place with the bubble side up.⠀
Gently, pour melted candy melts over the bubbles and smooth out, working quickly, spread evenly over the entire piece.  Allow chocolate to set at room temperature. You’ll know when it’s ready when you can touch it without leaving a mark. ⠀
Remove cake from the fridge. Carefully, wrap the chocolate band around the cake. Slowly, remove the bubble wrap adhering candy melts to the cake. Repeat on another sheet for decorating the top of the cake with honeycomb.

HONEY THYME GLAZED PORK CHOP:⠀
2 tablespoons extra-virgin olive oil⠀
4 bone-in center-cut pork chops (3/4 inch thick)⠀
*no solution added⠀
1 tablespoon butter⠀
⠀
MARINADE:⠀
1/4 cup chicken broth⠀
2 tablespoons extra-virgin olive oil⠀
2 tablespoons balsamic vinegar⠀
2 tablespoons honey⠀
1 tablespoon Dijon mustard⠀
1 tablespoon Worcestershire sauce⠀
1 tablespoon picked thyme leaves, chopped⠀
3 cloves garlic, smashed⠀
1/2 teaspoon smoked paprika⠀
1 teaspoon kosher salt⠀
1/2 teaspoon freshly ground black pepper⠀
⠀
STEPS:⠀
In a small bowl, whisk together the broth, olive oil, balsamic, honey, Dijon mustard, Worcestershire, thyme, garlic, smoked paprika, salt and pepper. Add pork chops to a large zip-top bag and pour the marinade over the top. Place in the refrigerator and marinate for at least 40 minutes and up to 8 hours.⠀
Remove chops from the marinade and pat dry. Add the marinade into a small saucepan and place over medium heat. Reduce until thick, about 5 minutes. Swirl in butter after thickened.⠀
Preheat oven to 375 degrees.⠀
Heat oil in cast-iron skillet over high heat. Add the chops and lower heat to medium-high. Cook for 4 minutes per side. The last minute of cooking brush the chops with the reduced marinade. Place in the oven and finish cooking for 4 to 5 minutes.⠀

Marbled Choco Chip Cookie Dough Loaf⠀
INGREDIENTS:⠀
1/2 cup sugar⠀
1/2 cup butter⠀
1 egg⠀
1 1/2 tsp vanilla⠀
1 1/2 cups all-purpose flour⠀
1 1/4 cups chocolate chips⠀
⠀
CHEESECAKE:⠀
1 cup heavy cream, softly whipped⠀
1 cup cream cheese (8 ounces) ⠀
4 gelatine leaves, soaked in 1/2 cup water⠀
1/2 cup milk chocolate⠀
1/2 cup white chocolate⠀
⠀
STEPS:⠀
In a large bowl, mix all the ingredients except the egg together. Set ¼ of the mix aside for later, then add the egg and stir to combine. Use 2 thin strips of parchment paper to go across the bottom of the pan to help with removing later. Use the remaining cookie dough to line the pan. Set aside in the freezer to firm up for 30 minutes, then line with parchment paper, and fill with baking beans.⠀
Place onto a baking sheet, and bake for 15 minutes. Remove the baking beans and paper, then return to the oven for a further 15 minutes or until golden brown, and cooked through. Set aside to cool.⠀

For the filling- Soak the gelatine leaves in cold water, and set aside.⠀
In a large bowl, mix the cream cheese with a wooden spoon, until it is soft. Softly, whip the cream so it is thickened but the peaks don’t hold their shape. Add the soaked gelatine leaves to the boiling water, and mix through the mixture. Then divide the mixture in 2.⠀
In 1 batch, add the melted white chocolate. To the other batch, add the melted milk chocolate.⠀
To Assemble- Place large spoonfuls of the chocolate filling into the cooled cookie loaf pan in a random pattern, then drag the back of a spoon through to create a marbled pattern.⠀
Roll the reserved cookie dough into about 10 small balls, and drop 5 of these into the mixture.⠀
Place in the freezer to set, for a couple of hours, then decorate with the remaining 5 cookie dough balls. Remove from the freezer and defrost for 20 minutes before slicing into the 10 and serving.⠀
