Finally trying meal delivery service and decided to make  @sunbasket  my first since they were giving out nice (affordable) discount. Gonna cook the food tomorrow but here’s a little preview: The food arrived in very durable and nice packages this morning and I’m loving how fresh everything is. Desde hace tiempo que vi en las historias  de @soybrenvita tenía ganas de prepararlos pero hasta apenas se me hizo 🤪 y la verdad quede fascinada 🤤
Chocorroles de Fresa 
Ingredientes:
2 rebanadas de pan Bimbo cero cero 
2 cucharadas de yogurt sin azúcar 
2 cucharadas de queso cotagge 
Mermelada de fresa 
Chocolate Turín sin azúcar (ocupe dos barritas)

Preparación: * Derrite el chocolate a baño María * Mezcla el yogurt con el queso * Con un rodillo aplana las rebanadas de pan y coloca una capa de la mezcla de yogurt con queso y encima una de mermelada. ( Puede ser casera, como ya les he mencionado que la pueden hacer, o comprar una sin azúcar)
* Enrolla y baña con el chocolate * Coloca en el congelador por uno 3-5 min aproximate y DISFRUTA 🤩️

This week I weighed in -2.8lbs!  Very exciting that I had such a good loss.  I'm not sure when the fear of going back to my old ways will go away, but it's still there every Sunday when I weigh in.

I’ve looked at a lot of creamy vegan soup recipes calling for full-fat coconut milk and I was super skeptical of the “Trust me! You can’t tell!” claim bc as much as I love curries containing coconut milk, I’m really not that keen on coconut. But, I caved and decided to try it out on this soup since I bought a 10-pound bag of potatoes the other day...

While I could still taste the coconut somewhat, if I hadn’t known it was in there, I’m not sure I would’ve been able to call it out as coconut milk. I think the soup turned out really well and my current house guest (my mother ) was pleasantly surprised as well: “I was kind of dreading it.”  #meatlessmonday .

Eating pizza isn't being bad, it's eating something that you love that sounds really good right now. That's it. There's no drama. There's no story. There's no well since I ate pizza I might as well eat 42 breadsticks and get ice cream because f*ck it. It's LITERALLY JUST PIZZA.

What I hate about the cheat meal is that it labels the meal as something naughty, like something you shouldn't be doing, and THAT creates the idea in our head that food choices are all or nothing.
+
You COULD have the pizza, and have a huge butter lettuce/avocado/tomato salad on the side. But if you have a cheat meal mentality, you'll probably skip the salad and load up on more food that is just going to make you feel like garbage later.
+
This is why I preach eating PHFF so obnoxiously and probably mention it in every single post. It's so important, but it's also SO DOABLE. If you're always including a protein source, a healthy fat or two, and you squeeze some fiber into every meal, you are doing something positive for your body.

But, I'm still trying to grow more muscle and get stronger. Tried s new recipe tonight! Tried Creamy Parmesan chicken from @wwpounddropper. You can find the recipe on her page and omg you are going to want to bc this is freaking awesome and only 2 points per piece. I ate it with mashed potatoes which were 2 points and cooked mushrooms and tomatoes on top of that. Also had a salad too with a balsamic dressing from Trader Joe's for 3 points. Total dinner 7 points :)

Just some mixed musings of things I think we should all know and remember:​
​
- You can be vegan AND also be unhealthy. Do not assume you or others will be healthy merely by being vegan. ​
- I don't know any LONG TERM vegans (10+ years being vegan) who eat a diet HIGH in processed foods like plant based cheeses and plant based meats. ​
- The long term vegans that I DO know eat a diet RICH in veggies and fruits (specifically fruits), and do NOT restrict themselves or use fasting as a frequent health tool.​
- Neither a healthy or an unhealthy diet will heal you of your eating disordered habits. That is INNER work that needs to be dealt with.​
- When you go vegan for health, and not for the animals, it won't be hard for you to go back to eating animals. ​

- HEALING TAKES TIME. Do not expect to be symptom-free in a matter of MONTHS after the YEARS of damage your body has taken because of your poor diet, lack of excersise, and negative thinking patterns. ​
- Healing takes CONSISTENCY. Do not flip flop your diet frequently and get frustrated when your body reacts with less than desirable symptoms. ​
- Veganism is NOT ABOUT YOU. It is a stance against the unnecessary exploitation of animals. The moment you make Veganism about yourself. ​

Food for thought... Food is a big part of our daily life. We need it and we enjoy it! A couple years ago we took the plunge and went gluten free. We got flack of course from some, the “just following the trend” comments and honestly to much criticism from others about how we chose to change our daily diet!
Well, about 2 weeks ago we decided to make a few more drastic changes. I mean we eat healthy enough right?! But, I decided there were some areas we needed to improve on and because our gut so directly affects the rest of our body including mental health there was cause for change. So, along with gluten we are now no longer eating any grains (I know down right crazy...) and we are not eating any refined sugars. this means pretty much all sugar is out! Raw honey, pure maple syrup and the sugar that is naturally already in the fresh fruits we eat are the only sugars we will consume.
I was surprised by how many people have said to me “oh my gosh what will you even eat?!” So I decided to do a daily post about one meal we eat every day. We eat A LOT! And what we eat is delicious! It just is all from scratch, so it is time consuming. But the results are worth it! Healing the guts of our children to promote a healthy mental state, balanced behaviors, better attitude and living a life filled with a lot less emotional roller coasters sounds pretty wonderful to me.
So tonight we had a shepherds pie consisting of ground beef, fresh veggies, a gravy made with puréed cooked veggies and home made beef broth topped with mashed carrots and potatoes. YUM! Best part, all the kids loved it
