New recipe up on the blog: #ad Crunchy Chopped Salad with Pears. I made this salad using @usapears, and it's a vegetarian twist on the classic Italian chopped salad. This one is loaded with romaine, radicchio, Bosc pears, chickpeas, heirloom tomatoes, Italian dressing, and fresh dill. I love adding pears to my salad because they not only add a sweet crunch, but they're filled with fiber, helping to manage gut health by supporting probiotic bacteria. Easy Pasta Salad with Yogurt “Ranch” Dressing. This refreshing salad is made with rigatoni, chopped cherry tomatoes, cucumber, avocado, red onion, basil, and chives. Here’s how to make the ranch:

1/2 cup Greek yogurt or Skyr
1/2 tsp garlic powder
1 1/2 tsp onion powder
1/4 tsp dried dill
1 tbsp apple cider vinegar

Salt & Vinegar Roasted Potatoes with avocado slices, poached egg, cherry tomatoes, radish sprouts, and @yellowbirdsauce Sriracha.

To make the potatoes, I sliced them and tossed them in some olive oil, white vinegar, and sea salt and baked for 20 min at 425 F. .
I always get asked about poached eggs tips, and my advice to you is to google Mark Bittman’s tips. That’s what helps me!

Been having a noodle craving, and then I remembered this Spicy Sesame Noodles and Crispy Tofu dish made with Spiralized White Sweet Potatoes! For the sauce I used @pinchofyum’s recipe and just took out the sugar and used Sriracha instead of chili paste (sauce is made with peanut butter, sesame oil, rice vinegar, and soy sauce). I cooked the white sweet potato noodles in a pan with sesame oil and covered, cooking for about 7-8 minutes until noodles soften! Vegan & gluten free!

I have learned that when I’m stressed or anxious or down that I just need to get outside and get moving. Whether it’s a hike in the mountains, walk down my street,  or a swim in the ocean, the combination of sunlight, exercise, and fresh air is healing.

I hate rain, but I’m thankful for all we had this season, especially because California is completely out of a drought and the mountainsides are insanely green and full of wildflowers. Today the sun is shining and it smells like jasmine and I am happy

To make the avocado dip to enjoy with your chips, add 2 avocados, 1 cup spinach, 1/2 cup artichoke hearts, 1/2 jalapeno, juice of 1/2 lemon, and 1/2 tsp salt to a food processor or blender. Process until mixture is smooth and even but still has some texture. .
