If you've followed me for a while, you know that I love MATCHA. About a year ago or so, I mostly gave up coffee for matcha. Why? Matcha gives me a caffeine boost without the jitters. Since matcha is a green tea, it still has caffeine, but it also contains L-theanine, a calming amino-acid that promotes a state of relaxation. This prevents that crazy spike and drop of energy that can come with coffee. Matcha is also extremely high in antioxidants, with 10 times the antioxidants of regular green tea (this is because matcha contains finely ground leaves that are consumed whole rather than strained).

Matcha tends to be bitter in taste, so don't be scared off the first time you try it. There are ways to prepare it that can make it quite flavorful and creamy. 1 cup hot (but not boiling) water
1 1/2 tsp matcha powder (look for ceremonial grade)
1 scoop collagen powder (I use @vitalproteins)
1/2 cup unsweetened almond milk or oat milk
1/2 tsp pure maple syrup (or 1 small Medjool date)

Blend!

Waffled Omelettes made with spinach, sweet mini peppers, and red onion and topped with mashed avocado, a dollop of harissa, bagel seasoning, and micro greens

To make omelette waffles, sauté veggies in a pan until they’re just soft (I used 3 peppers, 1-2 cups spinach, and 2 tablespoons chopped red onion).

In a big bowl, whisk together 2 eggs with salt and pepper. Add sautéed veggies, and mix together. Spoon into a preheated waffle iron (med high, use come cooking spray before so it doesn’t get stuck).

Cook for about 4 min in the waffle iron until eggs are cooked and golden. Remove carefully with a fork. Top with whatever suits your fancy.

If you aren’t roasting your tomatoes, get on it ASAP! Roasted Tomato Avocado Toast on Multigrain Bread topped with za’atar. To make roasted tomatoes, spread on a baking sheet on foil (I like to use the toaster oven cause it’s easier), cut tomatoes in half and drizzle with oil. Bake at 425 for 20 min!

One of my favorite self-care habits: READING  I’ve always been a book worm, but I never saw reading as “self-care.” But when I think back on 2018, I have to say that reading really helped me through the year.

Why is reading good for you? Besides from the obvious that it can be a source of entertainment and help you learn new things, it can also help alleviate stress, encourage empathy, lower your risk of dementia, and improve your memory. And very importantly, it can also help improve your sleep. Reading before bed helps me fall asleep so much faster, which is huge for me, since I used to struggle with falling asleep at night.

I’ve always been a fiction girl, but this year I I made a point to read one fiction and one non fiction book at a time, and I’ve loved it! I also set a reading challenge for myself on Goodreads, which helped keep me motivated (and I’m about to hit my goal of 30 books this year!) ⭐️ .
Not everyone feels like they are a reader, but this is an inexpensive yet impactful habit I encourage everyone to try.

Ingredients:
1/2 cup raw unsalted cashews, soaked in water overnight
1 tbsp extra virgin olive oil
1/2 medium yellow onion, chopped
4 cups baby spinach
12 oz chopped artichoke hearts
1 (15 oz) can cannellini beans, rinsed & drained
1/2 tsp garlic powder
1/4 cup nutritional yeast
3/4 cup unsweetened almond milk
1/2 tsp salt

Saute onions in olive oil until translucent. Add spinach & cook until wilted. Mix in artichoke.
Blend cashews, beans, garlic powder, yeast, almond milk, and salt until smooth. Add mixture to pan with veggies. Heat and stir until sauce is thickened. #AllureCookwareSet

Cheesy Jalapeño Avocado Toast! (Vegan and gluten free!) I made this spicy goodness by toasting @erewhonmarket paleo bread and topping it with mashed avo. Added some @miyokos_kitchen on top along with sliced jalapeño, and broiled it for about 5 minutes. Topped off with a little bit of taco seasoning

Cheesy Jalapeño Avocado Toast! (Vegan and gluten free!) I made this spicy goodness by toasting @erewhonmarket paleo bread and topping it with mashed avo. Added some @miyokos_kitchen on top along with sliced jalapeño, and broiled it for about 5 minute

You can have fries for breakfast, because I said so. Loaded Seasoned Sweet Potato Fries with Melted Vegan Mozz, Mashed Avocado, Cherry Tomatoes, Scallions, Parsley, and a Fried Egg.

To make sweet potatoes, preheat oven to 425. Slice sweet potatoes thinly and toss with oil (I like to use avocado oil) along with seasoning of choice (here I used @primalpalate New Bae Seasoning but I also like to use garlic powder, onion powder, cumin, paprika, etc.) Spread on a baking sheet and bake for 20-30 minutes until crisp. To melt cheese, remove from oven, spread cheese on and broil on high for 3-4 minutes until melted.
