Ham & Camembert Pastry Pie ⁣⠀

6-8 slices of prosciutto⁣⠀
2 garlic cloves⁣⠀
Small bunch of rosemary⁣⠀
1 pack of puff pastry⁣⠀
1 egg yolk, beaten⁣⠀
Flour for dusting⁣⠀

STEPS:⁣⠀
Slice the top of the cheese off, peel the garlic and finely slice and pick the rosemary.⁣⠀
Into the cheese lay the garlic cloves and sprinkle over the rosemary, pushing some in where you can. Place the lid of the cheese back on and wrap the cheese in the ham. You want to wrap it so the whole wheel is covered, matching the ends round the other side of the cheese. ⁣⠀
Once the cheese is covered in the ham, wrap in the sheet of pastry. It might be easier to trim the pastry so it is a square, and match the points to each other in the reverse side of the cheese. Pinch the pastry together and cut off any excess. The bottom should be flat and fairly smooth.⁣⠀
Brush with the egg wash and do whatever pattern you wish to on top. Bake at 200°C for around 20 minutes, until the pastry is golden and puffy.⁣⠀

Pickled Shrimp⁣⠀
INGREDIENTS:⁣⠀
1 lb cooked shrimp, shelled⁣⠀
1/2 lemon, juice only⁣⠀
1/2 small fennel bulb, thinly sliced, plus fronds⁣⠀
1/2 cup olive oil⁣⠀
1/2 cup cider vinegar⁣⠀
1 tsp sugar⁣⠀
1/2 tsp salt⁣⠀
1/2 tsp Tabasco⁣⠀
1/4 cup capers⁣⠀
2 cloves garlic, finely chopped⁣⠀
1 tsp celery seeds⁣⠀
⁣⠀
STEPS:⁣⠀
In a large Mason jar, add the shrimp and squeeze the lemon juice over them.⁣⠀
In a saucepan, add the fennel, oil, vinegar, sugar, salt and Tabasco and bring to a gentle simmer, then switch off the heat. Stir in the capers, garlic and celery seeds. Pour the mixture into the jar over the shrimp. Give it a good jiggle to make sure it’s all covered.⁣⠀
Seal the jar tightly and refrigerate for a minimum of 24 hours, or up to 3 days. Serve chilled, as canapés on skewers or small pieces of toast.⁣

Slice the sponge cake horizontally into two even layers.⁣⠀
Slice the muscat grapes in half vertically.⁣⠀
Soak the gelatin in water, and then heat in the microwave until dissolved.⁣⠀
Slice the red grape skins into four sections and remove two of them, creating a pattern.⁣⠀
In a bowl, combine yogurt, sugar, lemon juice and vanilla. Stir in gelatin followed by whipped cream, and mix until a mousse is formed.⁣⠀
In a cake pan, place a layer of sponge cake. Arrange the halved muscat grapes around the inside of the pan. Pour the mousse into the middle of the pan, then add muscat grapes on top of the mousse. Add more mousse, place the second sponge layer and then spread more mousse on top. Place in fridge until set.⁣⠀
Remove cake from pan, and decorate the top with the red grapes, muscat grapes and mint.⁣⠀

Midnight Mint Mocha Frappuccino Cupcakes ⠀

15 oz all-purpose flour⠀
9 1/2 oz superfine sugar⠀
3 teaspoons baking powder ⠀
1/2 teaspoon fine salt ⠀
1/2 cup unsalted butter, softened⠀
2 large eggs⠀
1 1/2 cups whole milk⠀
1/2 cup vegetable oil⠀
2 tablespoons Greek yogurt (or sour cream)⠀
1 tsp vanilla extract or vanilla bean paste⠀
4 drops white food gel⠀
2 tbsp cocoa powder⠀
2 coffee shots (about 4 tbsp)⠀
1 cup chocolate sauce⠀
1 tsp peppermint extract⠀
3 tbsp cocoa powder⠀

FROSTING:⠀
2 batches Swiss meringue buttercream⠀
1 tsp peppermint extract⠀
⠀
STEPS:⠀
Preheat a fan-forced oven to 275°F or a conventional oven to 320°F. Line two cupcake tins with the cupcake liners. ⠀
Add the flour, sugar, baking powder and salt to a large mixing bowl and mix with a hand mixer until well combined.⠀
Next, add the softened butter and mix on low speed until the mixture reaches a crumbly, sand-like texture.⠀
Add the eggs, milk, oil, yoghurt and vanilla, and mix on low speed until all the dry ingredients are incorporated. Scrape down the side of the bowl and mix for a final 20 seconds. ⠀
Split the batter into two separate mixing bowls. Add 2/3 of the batter in one bowl and 1/3 of the batter in the second bowl.⠀
Add the cocoa powder and coffee shots in the bowl with 2/3 of the batter and mix until well combined. Add the white food gel to the other bowl and mix.⠀
Add both batters to two separate piping bags. Pipe about 3 tbsp of the mocha batter into each cupcake liner. Then pipe some of the white batter on top and finish with more mocha batter filling each liner up ¾ of the way.⠀
Bake for 40–50 minutes, or until a toothpick inserted in the middle of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack before frosting.⠀
To prepare the chocolate sauce, add the peppermint extract to the sauce and mix until well combined.⠀
To prepare the frosting add peppermint extract and mix until well combined. Add to a piping bag fitted with a Wilton 1M piping tip. Set aside.⠀
Core the center of each cupcake and fill with chocolate sauce.⠀
Frost a swirl of frosting on each cupcake. Finish with a dusting of cocoa powder.

2 1/2 cups Alfredo sauce⠀

Chopped parsley, to taste⠀

STEPS:⠀
Preheat oven to 350 degrees.⠀
In a bowl, mix the ham, shredded cheese and ricotta. Set aside.⠀
In a skillet, saute the onion, garlic and bacon in olive oil until golden. Set aside.⠀
Place the chicken in a bowl and season with salt and black pepper. Add the crumbled bread, breadcrumbs and the onion mixture. Stir to combine.⠀
Scoop up a handful of mixture and press in the middle to form a small space. Fill with a spoonful of the ham and cheese mixture, and form a ball. Dip balls in flour, beaten eggs, then breadcrumbs. Fry in hot oil until golden. Drain on paper towels and set aside to cool.⠀
Place the Alfredo sauce and meatballs in a baking dish, and sprinkle with cheese.⠀
Bake for approximately 15 minutes, or until the cheese is au gratin.⠀
Finish with chopped parsley.

Whisk together 1/4 cup heavy cream and the gelatin. Microwave until steaming and whisk again until smooth. Beat into yogurt mixture until combined.⠀
In a separate bowl, beat remaining 1 1/4 cups heavy cream until stiff. Fold into the yogurt mixture.⠀
