It's only fitting that my last cooked meal at my NOLA apartment is also the first meal I cooked when I moved in, just two short years ago. As you all can see, from the past two years of posting my food, I've had some pretty interesting meals, and some that were just trash that I refused to post lol. It's a little bittersweet posting this cause I've had so many memorable experiences in my kitchen. I burnt my hand MULTIPLE times on the handle of a pan just out of a 450 degree oven cause not paying attention... and drunk, lol. I confessed to my wife, @kelly_nickels, that she's the best thing since smoked gouda, in so many words, and that I wouldn't be where I am today without her constant love. I cooked for groups of coworkers and friends when we were all stuck here during Thanksgiving or on whatever kind of block leave, producing what I believe to be the food that validated why I want to do this professionally. And here, I've had some of the toughest moments dealing with depression and just feeling that there's nothing good that can come out of my life. But food, I can tell you whole heartedly, is my saving grace, the thing that allows me to turn off everything and focus on what needs to be done. So, without further ado, to my kitchen, I'll surely miss you and think back fondly while I go to another home in Twentynine Palms and Los Angeles. And to the person who lives here next, if you ever read this, you better make sure you use this kitchen.. Or we're gonna have some not-so-nice words!!

Steak tartare | Confit egg yolk | Bone marrow | Sourdough bread 
The food gods were with me, kinda. The tartare came out nicely, but the marrow.. Damn, the recipe I followed made it inedible and the marrow melted away. Idk if it was the apple cider or the crazy amount of salt. But geebies, was it not good lol. And it was a Michelin recipe too. Definitely will follow my intuition next time! All in all though, was a really cool experience learning how to make two things I've never done before at the same time. Next time I'll make it even better!

All in all, not too bad. I wasn't paying attention and cut it the wrong way and it made it kinda chewy, womp lol. Sauce came out pretty nicely too. Wanted to make it out of a roux but my flour was really expired. SUPER womp haha

Yeah, the plating is absolute trash, but it tastes pretty damn good. That's what I get for not practicing more often, lol. I more or less wanted to show off how amazing sous vide is. That top to bottom color and taste/texture is simply fantastic. The sauce I made from yesterday's lamb stock was omg amazing, and it paired very well with the carrot puree and potatoes. Lamb stock

My first go at making a stock, a lamb stock nonetheless. Roasted seven bones for 50 minutes at 425 in EVOO with a whole garlic bulb, 2 celery sticks, 2 carrots, full yellow onion and a handful of peppercorns. Brought 2qt pot to boil then dumped it all in with 1 rosemary, 3 thyme and 2 crushed cardamom pods. Tossed the old peppercorns and put 7ish fresh ones. Reducing to half on medium heat then will strain and put in the fridge so solids will separate.
