makes one large #galette

1 cup all-purpose flour
1/2 tsp salt
1 tsp baking powder
100 g cold salted butter
100 ml sour cream
zest from 1 lemon
450 g heirloom tomatoes + 1 tsp salt
200 g #ricotta
1 scarce cup finely grated #parmesan cheese
1 handful fresh #herbs such as thyme, oregano, basil 
salt & pepper
#oliveoil for brushing
a few sprigs of fresh herbs, to serve

1. Add flour, butter, salt & baking powder to you Electrolux Masterpiece Food Processor and quickly mix for a few seconds until just combined. Add sour cream and #lemon, mix for 2-3 seconds more. You should now have quite a sticky dough.

2. Scoop the dough onto some plastic wrap. Form a tight ball and wrap it tightly. Place in the fridge for 2 hours.

3. Set oven to 225’C/440’F. Slice tomatoes and place onto a few layers of paper towels. Sprinkle with salt and let sit for 10 minutes.

4. Meanwhile, stir together ricotta, parmesan, herbs, salt & pepper. Set aside.

5. Place the pie dough on a floured surface. Roll out to a ~3mm thin galette, while regularly dusting with flour. Transfer to a baking tray covered in parchment paper.

6. Distribute the ricotta cream on top, leaving 6 cm (2 1/2 inches) around the edges. Layer the
sliced #tomatoes on top of the ricotta cream. Decorate with a few sprigs of fresh herbs, flakey sea salt & pepper. Brusch the edges with olive oil. Then bake in the middle of the oven for 18- 24 minutes, until generously golden and crispy. Let cool slightly before serving with a fresh salad on the side.

Fig & Cucumber Caprese with Pesto

One large serving

3-4 ripe figs
250 g #mozzarella
1/2 cucumber
1/2 cup toasted almonds & cashews
4 large handfuls of fresh #basil
1/3 cup + 1 tbsp (100 ml) #oliveoil
1/2 #lemon, juice
1 scarce cup grated #parmesan salt & pepper
chopped nuts, to serve

How to:
1. Mix all ingredients for the pesto except parmesan cheese to a somewhat grainy pesto (save some of the nuts for decoration). Add the finely grated parmesan and stir to combine. Season to taste with salt & pepper.

2. Slice the figs, cucumber and mozzarella. Layer on a large serving plate. Drizzle with pesto and decorate with chopped nuts, flakey sea salt & pepper. Enjoy️

#Bruschetta with Artichoke & Pickled Onion
serves 6-8

one large baguette🥖 
#oliveoil
salt

Artichoke dip:
290 g marinated artichoke hearts
1/3 cup sun-dried #tomatoes
1/2 cup oat sour cream or other plant based sour cream
1 clove of #garlic
1 tbsp lemon juice
1 tsp agave syrup
salt & pepper

Pickled onion:
1 red onion
3 tbsp white balsamic vinegar 2-3 good pinches of salt

sliced radishes, to serve
mâché lettuce, to serve

1. Start by slicing the red onion thinly and place in a shallow bowl. Add the vinegar and salt and stir to combine. Let sit for about 15 minutes.

2. Set oven to 175’C/350’F. Slice the baguette into 1/2 inch thick rounds. Place on a baking tray and drizzle with olive oil and salt. Toast in oven for 5-10 minutes or until the edges are golden & crusty, but the inside still soft.

3. Mix all ingredients for the artichoke dip with an Electrolux Immersion Blender, until you have a chunky, smooth and perfect consistency.

4. Scoop the artichoke dip onto the baguette rounds. Top with sliced radish, pickled onion and mâché lettuce. Serve straight away (don’t forget to try one or two first!) #vegetarian #antipasti #italianfood #eatplants #eattherainbow

Rhubarb #Lemonade Chia Fresca
makes about 1 + 1/4 litre

500 g rhubarb
1 litre water
1 dl (2/3 cup + 1 tbsp) sugar 2,5 dl (1 cup) lemon juice

How to:
1. Rinse and chop the rhubarb into smaller pieces. Place in a large sauce pan (this one is from our Infinite Chef Collection‍‍) and cover with water. Bring to boil and let simmer for 15 minutes.

2. Strain the rhubarb compote through a fine sieve and pour the juice back into the sauce pan. Squeeze out as much juice as possible from the rhubarb mash, by pressing it with a spatula or with the back of a spoon.

3. Bring to a simmer, add sugar and let simmer while stirring until the sugar is dissolved.

4. Remove from heat, then add the lemon juice, again through a sieve to leave behind any pulp or kernels. Stir to combine.

5. Pour the lemonade into clean glass bottles. When serving, dilute with 1 part water and 2 parts lemonade, or as is for a more intense flavor.

6. To make lemonade into a chia fresca then simply add 1 tsp chia seeds to a large glass of water and fill up with the dilluded lemonade. Stir constantly for a minute or so, then let sit in the fridge for about 10-15 min before serving. What’s better than summer fresh new potatoes? Summer fresh new potatoes with garlic butter!Here’s what you need for our favorite ‘#färskpotatis’ dish:

#SmashedPotatoes with Goat Cheese, Walnuts & Herbed Garlic Butter, serves 4

800 g #newpotatoes or small firm potatoes
75 g salted butter
small handful of parsley
1 tbsp chopped chives
1 tbsp chopped #dill
1 clove #garlic
1/2 tbsp flakey sea salt
100 g soft goat cheese
small handful of chopped walnuts
honey, to serve
salt & pepper

How to:
1. Scrub the potatoes clean. Place in a large sauce pan (this one’s a favorite from the Infinite Chef’s Collection) cover with water and a generous amount
of salt and bring to boil. Cook for ca 15 minutes.

2. Meanwhile, combine butter, herbs, garlic and salt in a food processor until well combined. This recipe yield more #garlicbutter than you need, so save any extra for your next BBQ!

3. Drain the #potatoes and let cool somewhat. Then heat a generous dollop of garlic butter in the largest frying pan you’ve got (or two, if you need it). Place the potatoes inside and smash them with a fork. Let cook on medium high heat until crispy and browned underneath. Flip!

4. Crumble the goat cheese and walnuts over. Cook for another few minutes until the potatoes have browned on both sides and the cheese is somewhat melted. Add more butter if needed.

5. Season with flakey sea salt, black pepper and a drizzle of honey. Decorate with fresh herbs

Lastly, spoon over some extra garlic butter. Enjoy warm!
