A healthy and very easy recipe for a vegan buckwheat bread.🤗

INGREDIENTS
⠀
🥕1 cup buckwheat
🥕1/4 cup chia seeds
🥕1/2 tsp salt
🥕1/4 cup almonds 🥕1 cup water
⠀
METHOD
⠀
🥕Soak the buckwheat and almonds in water (better overnight).
🥕Pre-heat oven to 190C.
🥕Drain and rinse the buckwheat and almonds.
🥕Place everything for the bread apart from the almonds into a blender and blend until smooth.
🥕Chop the almonds into slices, mix into the batter then pour into a tin.
🥕Bake the buckwheat bread for about 50 minutes.
🥕Once cooled, slice and store in the fridge for up to a week or keep in the freezer for a longer life.

Apples are rich in antioxidants that help to protect our cells.

Apples also contain dietary fibre needed to support a healthy digestive system, as well as vitamins A and C that support the immune system, vitamin K needed for blood clotting, biotin (vitamin B7) that helps to break down fat, and iodine which is involved in healthy thyroid function.

Apples contains pectin. A recent research by the European Journal of Nutrition found that eating pectin-rich whole apples had a cholesterol-lowering effect in healthy volunteers, compared to apple juice which did not. ⠀⠀

Ingredients
* 2 tbsp olive oil
* 1 whole onion, diced
* 1 whole carrot, peeled and diced
* 1 tsp minced garlic
* 1 tbsp tomato paste
* 1 tsp cumin
* 1/2 tsp salt
* 1/4 tsp black pepper
* 1 vegetable stock
* 3 cups water
* 1 1/4 cups brown, green or red lentils
* 2 bay leafs
* 2 cups fresh spinach leaves or kale
* 1 whole lemon
⠀⠀
‍Heat up the olive oil in a soup pot over medium heat. Add the diced onion and carrot. Sauté until the onion softens and starts to turn golden. Add the garlic and sauté for 1-2 minutes.
⠀⠀
Add the tomato paste, cumin, salt and black pepper. Stir and sauté for 2 minutes longer.
⠀⠀
🥕Add the vegetable stock, water, lentils and bay leaf. Bring to a simmer then cover the pot, slightly vented. Let the soup cook for about 30 minutes until the lentils are soft.
⠀⠀
Remove soup from heat, remove the bay leaf and discard. Use an immersion blender to puree the soup halfway, so that it thickens but still has texture.
⠀⠀
🥬Put soup over medium heat again. Add the fresh spinach leaves. Stir the greens into the soup for 1-2 minutes until just wilted (covering the pot will wilt them faster).
⠀⠀
Turn off the heat and stir in fresh lemon juice to taste. Adjust seasonings if desired, and serve.
⠀⠀

For those of you who do not know, gelatin is extracted from animal skin and bones. If there is a part of you that objects to that, then agar-agar is for you. Derived from red algae, it is the Vegan substitute for gelatin.

Since it is discovery, agar-agar been used predominantly to make desserts in Asia, but it has also found uses as a vegan gelling agent and a thickener in savoury dishes as well.

Kisel – is a well-known and popular drink in Russia.🥤
⠀
This healthy drink contains fresh (or frozen) berries, sugar and water, and thickened with tapioca starch. The kisel thickness can vary depending on how much tapioca starch is used. The thickest version does look like a mousse or jelly and can be eaten with a spoon, however the thin kisel is the most common version in Russia and usually consumed as a drink.

Nowadays there are lots of instant kisel mixes, which you can find at Russian stores, but I do assure you that to make you own kisel is very easy and definitely healthier. I made mine with frozen berries. 
⠀
Ingredients
400g frozen (or fresh) berries
2 tbsp coconut sugar (or more, depends on your taste)
2l water
3 tbsp tapioca starch ⠀
Method
 Keep aside some berries. Strain the rest through a sieve into a saucepan. Add water, coconut sugar and bring to boil. Reduce the heat, taste and adjust the sweetness.
 In a small cup, mix starch with few tablespoons of cold water. Add it to the saucepan along with berries that you have kept. Give it a good stir and turn off the heat.
 Pour in a glasses or cups. Serve warm or cold. Love it, enjoy it!

It is naturally fat free, gluten free, and vegan! Tapioca flatbreads are also full of carbs that keep you full for long periods of time, so although they’re not necessarily full of nutrients, fibers or protein, they’re still considered a “diet” food.

They are cooked to order with a variety of sweet and savory fillings like cheese, coconut, or chocolate. ⠀
Me and my family love it with cheese, spinach, tomatoes and carrots or banana with chocolate. It is delicious!
